The fruit was picked, given a gentle foot crushing and allowed to macerate for 24 hours before basket pressing into neutral French barrique. The juice was wild fermented to dryness over ten days. The wine was then transferred to Stainless steel and left to rest for four months before bottling. Wonderful growing conditions in 2021 wine has balanced acidity
